The past couple of days we have had a cold front {two days of 80+ degree weather, now we are back down to upper 40′s!}—has made me want comfort food! It doesn’t get any more comforting that mac and cheese! This is one of our family’s favorites:
MAGNIFICENT MAC AND CHEESE
8 oz. of macaroni noodles
1 lb. shredded cheddar cheese (you really can’t have enough cheese–feel free to increase! I do!)
2 cups of milk
3 eggs, beaten
1 1/2 tsp. salt
1 tbs. of butter, melted
Boil noodles and drain. Spray 9-13 baking dish with cooking spray. {I like to use my misto — but any cooking spray will do.}
Spread noodles evenly in baking dish.
Mix all other ingredients together and pour over noodles—being sure to spread evenly.
Bake at 350 degrees for 30-45 minutes.
